***Savoury Salad Rolls with Dipping Sauce***
Filling:
🌱1 package of smoked tofu (Ella used edamame)
🌱200g vermicelli (rice) noodles
🌱1/2 long cucumber
🌱2 medium carrots
🌱Whatever fruit/veggies you have in your fridge or freezer! (Ella used mango)
🌱Sesame seeds or other seeds of choice (optional)
🌱6-8 rice paper wraps
Tahini-Miso Dipping Sauce (nut-free)
🌱2 Tbsp tahini
🌱3 Tbsp hoisin sauce
🌱1 ½ Tbsp rice vinegar
🌱2 Tbsp white miso paste
🌱Mince garlic
🌱Water for desired thickness
🌱Optional add-ins: ⅓ tsp maple syrup, chili flakes
OR Creamy Peanut Dipping Sauce
🌱1 cup peanut butter
🌱1 Tbsp rice vinegar
🌱2 Tbsp soy sauce
🌱2 Tbsp maple syrup
🌱1 Tbsp sesame oil
🌱2-3 Tbsp water (for desired thickness)
Method:
🌱Cook vermicelli noodles according to package instructions. Rinse under cold water until noodles have cooled down.
🌱Prep the rest of your filling ingredients.
🌱Add water to a plate or shallow bowl. Place rice paper in the water until it becomes flexible. Lay wrap on a clean towel or plate.
🌱Place your filling ingredients in the middle of you rice paper wrap. Fold in the bottom, fold in the edges and roll up the wrap.
🌱Repeat until you use up your remaining filling ingredients.
🌱Add all dip ingredients together and whisk together until smooth.
🌱Dip and enjoy!
