Today, we're making a quick and refreshing pasta salad, protein-packed lemon energy balls, and delicious homemade hummus with fresh veggies! Perfect for back-to-school, work or on the go! đđŸââïž
Easy Peasy Pasta Salad
Ingredients:
đ±2 cups pasta of choice
đ±Whatever fruits and veggies you have (we used cucumber, tomatoes, peppers and olives)
Dressing:
đ±1/4 cup olive oil
đ±3 Tbsp lemon juice
đ±2Â minced garlic cloves
đ±1 tsp dijon mustard
đ±1 tsp dried basil (or fresh)
đ±1 tsp oregano
đ±1 tsp rosemary
đ±salt and pepper to taste
Method:
đ±Cooks pasta as per instructions
đ±Blend dressing
đ±Chop up fruits and veggies of choice
đ±Combine and enjoy!
Energy balls
Ingredients:Â
đ±3 Tbsp lemon juice
đ±Zest of 1 lemon
đ±1/2 cup rolled oats
đ±1/3 cup raisins
đ±1 Tbsp chia seeds
đ±1/2 cup nuts of choice (we used almond and walnut)
đ±1/4 shredded coconut
Need a nut free version?
đ±11 cup quick oats
đ±1 1/3 cup flax meal
 đ±11/2 cup sunflower seed butter
 đ±11/4 cup maple syrup
 đ±11/8 cup sunflower seeds
đ±1 1/8 cup plant-powered chocolate chips
Method:
đ± Add all ingredients to a blender or food processor and blend until combined.
đ±Roll into small balls.
