Welcome back to our Zero Food Waste Series, where we share how you can save your dollars and the planet! š
Today, we're making a quick and refreshing pasta salad, protein-packed lemon energy balls, and delicious homemade hummus with fresh veggies! Perfect for back-to-school, work or on the go! šš¾āāļø
Easy Peasy Pasta Salad
Ingredients:
š±2 cups pasta of choice
š±Whatever fruits and veggies you have (we used cucumber, tomatoes, peppers and olives)
Dressing:
š±1/4 cupĀ olive oil
š±3 Tbsp lemon juice
š±2Ā minced garlic cloves
š±1 tsp dijon mustard
š±1 tsp dried basil (or fresh)
š±1 tsp oregano
š±1 tsp rosemary
š±salt and pepper to taste
Method:
š±Cooks pasta as per instructions
š±Blend dressing
š±Chop up fruits and veggies of choice
š±Combine and enjoy!
Energy balls
Ingredients:Ā
š±3 Tbsp lemon juice
š±Zest of 1 lemon
š±1/2 cup rolled oats
š±1/3 cup raisins
š±1 Tbsp chia seeds
š±1/2 cup nuts of choice (we used almond and walnut)
š±1/4 shredded coconut
Need a nut free version?
š±11 cup quick oats
š±1 1/3 cup flax meal
Ā š±11/2 cup sunflower seed butter
Ā š±11/4 cup maple syrup
Ā š±11/8 cup sunflower seeds
š±1 1/8 cup plant-powered chocolate chips
Method:
š± Add all ingredients to a blender or food processor and blend until combined.
š±Roll into small balls.
