Today, we're making a quick and refreshing pasta salad, protein-packed lemon energy balls, and delicious homemade hummus with fresh veggies! Perfect for back-to-school, work or on the go! đŸƒđŸŸâ€â™€ïž


Easy Peasy Pasta Salad


Ingredients:

đŸŒ±2 cups pasta of choice

đŸŒ±Whatever fruits and veggies you have (we used cucumber, tomatoes, peppers and olives)


Dressing:

đŸŒ±1/4 cup  olive oil

đŸŒ±3 Tbsp lemon juice

đŸŒ±2  minced garlic cloves

đŸŒ±1 tsp dijon mustard

đŸŒ±1 tsp dried basil (or fresh)

đŸŒ±1 tsp oregano

đŸŒ±1 tsp rosemary

đŸŒ±salt and pepper to taste


Method:

đŸŒ±Cooks pasta as per instructions

đŸŒ±Blend dressing

đŸŒ±Chop up fruits and veggies of choice

đŸŒ±Combine and enjoy!


Energy balls


Ingredients: 

đŸŒ±3 Tbsp lemon juice

đŸŒ±Zest of 1 lemon

đŸŒ±1/2 cup rolled oats

đŸŒ±1/3 cup raisins

đŸŒ±1 Tbsp chia seeds

đŸŒ±1/2 cup nuts of choice (we used almond and walnut)

đŸŒ±1/4 shredded coconut


Need a nut free version?

đŸŒ±11 cup quick oats

đŸŒ±1 1/3 cup flax meal

Â đŸŒ±11/2 cup sunflower seed butter

Â đŸŒ±11/4 cup maple syrup

Â đŸŒ±11/8 cup sunflower seeds

đŸŒ±1 1/8 cup plant-powered chocolate chips


Method:

đŸŒ± Add all ingredients to a blender or food processor and blend until combined.

đŸŒ±Roll into small balls.
