šŸŽƒ Stop throwing out your Halloween pumpkins, instead make these simply delicious recipes!Ā 


Food waste is spooky so letā€™s do our part for the planet by reducing it this Halloween. Did you know you can eat almost every part of the pumpkin, including the skin? šŸ‘©šŸ¾ā€šŸ³


If you donā€™t have the time this year, be sure to donate your pumpkins to an animal sanctuary or compost them instead!Ā šŸŒŽ


Roasted Pumpkin Seeds Recipe:

šŸŒ±Seeds from one medium carving pumpkin

šŸŒ±1 tbsp olive oil

šŸŒ±A dash of salt and pepper

šŸŒ±A dash of cayenne pepper OR 1-2 tsp of your favourite spice like pumpkin pie spice.


Method:

šŸŒ±Preheat oven to 350ā„‰.

šŸŒ±Scoop out seeds from a carving pumpkin.

šŸŒ±Rince seeds, remove any excess flesh, and dry with a tea towel.

šŸŒ±In a bowl, add olive oil and spices.

šŸŒ±Evenly spread seeds on a baking sheet and place in the oven.

šŸŒ±Bake for 12-15 minutes, stirring every 5 minutes.

šŸŒ±Enjoy! šŸ˜‹


Pumpkin Soup Recipe:

šŸŒ±1 medium carving pumpkin

šŸŒ±1 onion

šŸŒ±1 1.5-inch piece ginger

šŸŒ±4 cloves garlic or 1 tsp garlic powder

šŸŒ±1 400 mL can coconut milk

šŸŒ±4 cups vegetable stock

šŸŒ±1 tbsp olive oil

šŸŒ±A few sprigs of dried sage

šŸŒ±1 tsp cinnamon

šŸŒ±1 tsp cumin

šŸŒ±Ā½ tsp nutmeg

šŸŒ±ā…› tsp cloves


Method:

šŸŒ±Preheat oven to 400ā„‰.

šŸŒ±Wash pumpkin thoroughly and remove seeds.

šŸŒ±Cut into quarters and place on a baking sheet.

šŸŒ±Bake for 35 minutes.

šŸŒ±Add olive oil to a large pot on medium low heat.

šŸŒ±Dice onion, ginger, and garlic, and saute for 5 minutes.

šŸŒ±Add vegetable broth, and simmer on low.

šŸŒ±Chop cooked pumpkin into small chunks, leaving skin on.

šŸŒ±Add pumpkin chunks and coconut milk to pot and bring to a boil.

šŸŒ±Reduce heat to medium low and simmer for 10 minutes.

šŸŒ±Serve with roasted pumpkin seeds, coconut yogurt, and bread!
