Welcome back to our Eco Recipes Series where we empower you to make planet-positive food choices! 🌎👩🏾‍🍳

Chickpeas are incredible plants, these legumes not only enrich the soil, they turn nitrogen into protein! How amazing for us and our planet! 🌱👏🏾

  • 1 15oz can chickpeas

  • 2 Tbsp olive oil

  • 1 tsp garlic powder

  • Salt and pepper (to taste)

  • 1 tsp paprika (optional)

  • 2 tsp nutritional yeast (optional)

  • Open, drain and rinse chickpeas.

  • Add all ingredients to a large bowl and stir until all the chickpeas are coated.

  • Add to an air fryer or oven sheet pan and layer evenly

  • Air fryer at 390°F for 12-15 minutes or roast in an oven at 425°F for 30 minutes.

  • Around halfway through, stir the chickpeas to ensure they are getting evenly roasted.

  • The goal is to have them crunchy but not burnt, feel free to try them as you go!

  • Store in an airtight container at room temperature (not in the fridge) for up to one week.

Enjoy as a quick snack or add a flavourful crunch to salads and bowls! 😋

Bonus tip: Freeze the aquafaba (chickpea water) from the can to use as a binder when baking. Aquafaba recipe coming soon! What can’t chickpeas do?! 😍
