BLACK BEAN & SWEET POTATO VEGGIE BURGER

Servings: 8 medium-sized burgers
Ingredients:
š±Ā¼ cup quinoa
š±1 large sweet potato
š±2 Tbsp oil
š±Small onion
š±2 cloves garlic
š±1 large carrot (or equivalent to one large carrot)
š±Spices: 2 tsp cumin, 1 tsp paprika, 1 tsp salt, pepper to taste
š±Lime
š±1 can of black beans
š±1 Tbsp ground flaxseed (3 Tbsp water per 1 Tbsp of flaxseed)
š±Ā¼ cup oat flour (regular flour works too)
š±Optional: Add a little marmite, mushrooms, seaweed or soy sauce to add an umami flavour.
Method:
š±Cook quinoa per package instructions
š±Steam sweet potato until soft
š±In a frying pan, add 1 Tbsp of oil and saute onions and garlic together. Add carrots, lime juice and spices for the last 30 seconds, then remove from the heat
š±Prepare flaxseed egg by combining 1 Tbsp of flaxseed and 3 Tbsp of water, and let sit for 5 minutes
š±Drain and rinse black beans
š±Add sweet potato and black beans to a bowl, and mash together
š±Stir in quinoa and sauteed veg and spices
š±Mix in flaxseed egg and oat flour (add more flour for desired firmness)
š±Shape into burger patties
š±Add 1 Tbsp to frying pan and cook burgers for about 5 minutes per side until the outside appears crisp and brown.
š±Add to burger bun, add your favourite topping and enjoy! š
