Roast ingredients:
🌱1 can chickpeas (15 oz), drained
🌱1 package firm tofu
🌱1 tsp salt
🌱1/2 tsp black pepper
🌱1/2 tsp garlic powder
🌱1 tsp onion powder
🌱2 tsp dried oregano
🌱2 tsp thyme
🌱1 tsp dried rosemary
🌱1 tsp ground sage
🌱3 tbsp cornstarch
🌱3 tbsp chickpea flour or rice flour
🌱2 tsp olive oil
🌱1 tbsp plant-powered Worcestershire sauce
Roast glaze ingredients:
🌱2 tsp maple syrup
🌱2 tsp vegan Worcestershire sauce
🌱1 tsp balsamic vinegar
🌱1 tsp olive oil
🌱1/2 tsp rosemary
Roast stuffing:
🌱1 1/2 cups roasted vegetables of choice, we used sweet potatoes and carrots
Method:
🌱Roast vegetables of choice.
🌱Pre-heat oven to 385 degrees F (200 degrees C).
🌱Add all roast ingredients into a food processor (blender works too), process until smooth.
🌱Transfer to parchment-lined baking sheet. Spread out into a square , about ½ inch thick.
🌱Add stuffing and roll the roast using parchment paper and seal together.
🌱Leave on parchment paper and bake for 30 minutes.
🌱Remove from oven and brush glaze all over the roast.
🌱Bake for another 15 minutes.
🌱Let cool before slicing, and enjoy!
