HOLIDAY RECIPE: LEFTOVER BREAKFAST WRAP
Need to use up holiday leftovers? Make these breakfast wraps from any of your favourites! It's the perfect way to try some new combos and get creative.

Total time: 30 minutes
2 Tbsp. Olive Oil
2x Whole Grain Wraps
2 slices of leftover Lentil Loaf
½ cup leftover Mashed Potatoes
Leftover Brussel Sprouts
Leftover spread (ex: Hummus, Spinach and Artichoke dip, salsa)
Plant-based Cheese of your choice (optional)
Pinch of Salt and Pepper
Preheat over to 375 F.
Heat a medium skillet over medium-high heat. Add olive oil.
Place mashed potatoes on one side of skillet and lentil loaf on the other. Allow mashed potatoes and lentil loaf to crisp on one side before flipping.
Once potatoes and lentil loaf are crisp on both sides, remove skillet from heat.
Spread leftover spread onto wrap.
Place Lentil loaf then mashed potatoes onto wrap. Top with Brussel Sprouts, Gravy and plant-based cheese. Season with salt and pepper.
Fold wraps and place onto baking sheet. Place into oven and bake for 10 minutes and then flip. Bake for another 10 minutes or until wrap is golden brown.
